From 1992 to 2002, on the second Monday of each month, a lunch club met at a different steakhouse in New York City. It was called The Red Meat Club (RMC). It was a collection of chefs, wine buyers, cocktailians and other miscreants. This was an era before The Food Network. It was before iphones and blackberries and the earliest meatings were before cell phones. 11 meatings a year were held in restaurants but in August, we convened at a member's house for the annual RMC picnic. We contracted with one of the best butchers in New York a special 28-Day, Dry-Aged Angus Porterhouse Steak. They were ridiculously expensive but they were also the most ridiculously delicious steaks any of us foodies had ever had.
In 1996, the RMC picnic was held at my house in New Brunswick. When the dust cleared on Tuesday, there were 5 extra 3 lb steaks in the cooler. I brought them to the restaurant and gave them to the chef. "Offer them as a Steak For Two for $95," I said. "When they don't sell, you and Mark and I will eat them after work." At the end of that day, there were none left. The longest-standing, and most popular item on the Stage Left menu had begun its tenure.
Fourteen years later, 28-Day-Dry-Aged, 3-Pound Porterhouse for Two is still our most popular item at Stage Left. NJ Monthly readers dubbed it Best Steak In Central Jersey many years in a row.
