The Red Meat Club Steak For Two - $59

From 1992 to 2002, on the second Monday of each month, a lunch club met at a different steakhouse in New York City. It was called The Red Meat Club (RMC). It was a collection of chefs, wine buyers, cocktailians and other miscreants. This was an era before The Food Network. It was before iphones and blackberries and the earliest meatings were before cell phones. 11 meatings a year were held in restaurants but in August, we convened at a member's house for the annual RMC picnic. We contracted with one of the best butchers in New York a special 28-Day, Dry-Aged Angus Porterhouse Steak.

This Week's Cocktails: Double Cross and The Vodka Sazerac

John Schiller opened the Sazerac Coffee House in New Orleans in 1859 with the Sazerac cocktail, utilizing New Orleans’ favorite Cognac: Sazerac. When John Handy took over the bar, he swapped the Cognac for Rye and the debate has raged ever since. Our friend Dale DeGroff makes a killer version using a mixture of rye and Cognac. Bourbon is also a pleasant substitution not without historical precedent.

This Week's Cocktails: The Monkish Blackberry Daiquiri

So last week we introduced the Monkish Blackberry Daiquiri and it was really well received. I did however receive a very interesting email pointing out that in NJ, traditionally blackberries were harvested early in the summer. At this time of year, what I must have been raving about is a relative of the blackberry, called a Black Diamond. Well I did some research and it turns out that is largely correct. The thornless, black diamond is a particular cultivar of blackberry. It recently has become the leading cultivar of blackberry in the Pacific Northwest.
